We used to have curried bananas growing up. Here’s my vegan version, totally delicious.
6 Tablespoons vegan Mayonnaise
2 Tablespoons Medium Curry Powder
1 Lemon juiced
2 Tablespoons Maple Syrup
Slice the bananas and put in a bowl or dish. Mix the remaining ingredients together and stir through the bananas. Keep in the fridge. They will last a couple of days.
