Super underrated, couscous is great for many reasons.  It is so easy to prepare, keeps in the fridge for a few days and goes with almost anything. I make the basic recipe, then add bits and pieces to it as the days go, depending on what I fancy.  I always use Marigold Vegan Bouillon as it has such a great flavour.  In this recipe I added cucumber, red peppers and sweetcorn.

 

6 Tablespoons couscous

1 Tablespoon Marigold Vegan Bouillon

Boiling water to cover the couscous.

 

Mix together the couscous and bouillon in a bowl.  Pour enough boiling water over the mixture to cover the couscous and stir.  Stir every now and then until the couscous expands. You may have to add a little more water if necessary.  Allow to cool then add the cucumber, peppers and sweetcorn.
