Carrot Salad
With the weather being a little warmer lately, I thought I would start experimenting with some new salad ideas. This carrot salad was delicious and lasted a few days covered in the fridge as I made a lovely big bowl of it
6 Carrots grated
120g pine nuts
1 tin pineapple chunks drained
1 cup raisins
Dressing
1 lemon juiced
6 tablespoons vegan mayonnaise
Salt and pepper
3 tablespoons maple syrup
1 teaspoon wholegrain mustard
Mix the dressing together, then add to the carrots, pine nuts, pineapple and raisins
