Tomato Soup

My 3 kids love tomato soup, it’s the only soup all three of them like, so I can make a big batch and they’ll all be happy dunking my homemade No Need to Knead Bread in it.  It’s delicious and super nutritious too.  Easy to make …

400g Passata (you can use shop bought or as I did here cook a load of fresh tomatoes and whizz them up)

1 red onion chopped

1 tablespoon vegetable stock powder (I use Marigold Organic Swiss Vegan Bouillon Powder)

125ml Oat cream (Oatly is my favourite brand)

1 Tablespoon Organic Maple Syrup

Saute the onion until soft.  Add the passata, oat cream and vegetable stock.  Bring to the boil, then whizz up (I use a hand held blender) until creamy, taste and add the maple syrup if you feel it necessary. See … Easy!
