Spinach and Cauliflower Soup

I made this soup one afternoon last week after I opened the fridge and saw I had 2 bags of spinach I had bought and hadn’t used yet.  I hate wasting food.  As it was a cold, wet day here, I thought a delicious green soup would do the trick.  I wasn’t sure how it would taste, however it is gorgeous.

 

1 Head of cauliflower florets

1 red onion chopped

1 Tablespoon Marigold Vegetable Bouillon

2 bags of Spinach washed

1 clove garlic crushed

Boiling water

 

Wilt down the spinach and put to one side.  In a large saucepan, add a little extra virgin olive oil and the chopped onion.  Saute until the onion is soft, add the cauliflower florets, garlic and veg bouillon.  Top up with boiling water just covering the veg.  Simmer gently until the cauliflower is cooked through.  Add the wilted spinach.  Whizz up and serve.
