Scrambled Tofu
Tofu is such a versatile ingredient. As it can be incredibly bland, it needs the right ingredients to spruce it up and it’s a great source of protein. The kids can now make this recipe themselves, result for me! Also, the turmeric in the recipe is a great anti inflammatory, improves brain function and increases the antioxidant capacity of the body.
Serves 2
One block of tofu drained
½ teaspoon garlic powder
¼ teaspoon turmeric powder
Salt and pepper
I buy pressed tofu in glass jars (Biona or Eco Cesta). Drain in a sieve, then mash it up in a bowl with a fork. Heat a frying pan and add the tofu. You don’t need any oil as the tofu will still have some water in it. Add the garlic powder, turmeric powder, salt and pepper. Keep stirring and watch the tofu take on the turmeric. It will change colour and become more yellow. You will know the tofu is done once all the water has evaporated and the tofu starts to brown slightly. Serve on toast, with vegan sausages, baked beans or tomatoes. My son loves putting hummus on top and eating it together. Whatever you decide, it’s delicious.
