Orange Loaf
A couple of days ago, my lovely friend Caroline was coming to have a cuppa with me at home and I wanted to bake something that was not only quick, but scrummy too. I saw some oranges in the fruit bowl and decided I was going to experiment – so this orange loaf was created.
Dry ingredients
200 g spelt flour
1 tsp baking powder
½ tsp salt
1½ tsp bicarb
50g coconut palm sugar
Wet ingredients
100g maple syrup
50 ml Almond or Soy or Hazlenut milk
30g melted coconut oil
¾ tsp apple cider vinegar
1 tsp vanilla extract
Juice and zest of 2 oranges
180 degree oven, grease a loaf tin with some coconut oil.
Mix dry to wet and whisk with a balloon whisk. Pour the mixture into the greased loaf tin and bake 25-30 minutes or until skewer comes out clean. Allow to cool completely before removing from the tin.
