Mango Granola Bowl

Following up from my Blooming Breakfast Bowl, I decided to try out a similar recipe using Mango. My kids love Mango and I wanted to try a new recipe getting more chia seeds in their diet which provide an excellent source of Omega-3 fatty acids, they’re rich in antioxidants and will provide fibre, iron and calcium too.  Hooray for chia seeds!

 

1 Bag frozen mango

2 tablespoons coconut palm sugar

4 tablespoons chia seeds

 

Gently defrost the frozen mango in a saucepan over a low heat adding the coconut palm sugar.  Once the coconut palm sugar has dissolved and the mango is soft, transfer the fruit mixture to a blender and blend until smooth.  Pour into a bowl and add the chia seeds.  Stirring occasionally, allow the chia seeds to fatten up.  This mixture will keep in the fridge for up to a week.  For this bowl I used about 5 tablespoons of the mango chia seed mixture and topped it with yoghurt and home made granola (recipe in previous posts).
