Mac 'n Cheeze

Another firm favourite with the kids. I prepare this in the morning, doing everything except baking it. Cover until you need it, then pop it in the oven!


400 g Spelt Pasta (I use Biona Organic)

200 g Grated non-dairy cheese (I use Violife)

2 Cups cashew nuts, soaked

2/3 cup nutritional yeast

1 ½ cups water

2 large cloves garlic, crushed

1 teaspoon salt


Boil the pasta until al dente. Drain the pasta and add to an ovenware dish. Blend the cashew nuts, nutritional yeast, water, garlic and salt together in a blender.  Pour over the pasta and mix well.  Sprinkle the grated cheese over the pasta and bake in a 180 degree oven until piping hot.
