Lentil Dahl Bowl

I love lentil dahl, it’s one of my favourites.  I really fancied some today for lunch, so I took 1/3 of a cup of red lentils popped it in a saucepan, added 250ml Rude Health coconut milk, a good sprinkle of turmeric, sprinkle of garlic granules and ½ teaspoon garam masala.  Bring to the boil and allow to simmer until the lentils are cooked.

 

I then added some delicious home sprouted mung beans to the bowl, homemade basil pesto (recipe in a previous post), fried some mushrooms in tamari sauce, added a quarter of an avocado and a sliced tomato.  Sprinkle with pumpkin seeds and salt and pepper.  Mmmmmmm
