Lemon and Chic Spelt Biscuits

After many failed attempts, I finally came up with these crunchy vegan biscuits.  I love using the biscuit press and this recipe was perfect for it.  If you don’t have a biscuit press, simply roll into balls and flatten with your fingertips.

 

250g Spelt Flour

1 teaspoon baking powder

1 teaspoon bicarbonate of soda

Pinch of salt

2 teaspoons chia seeds

80g melted coconut oil

70g coconut palm sugar

¼ cup lemon juice

Zest of a lemon

2 Tablespoons maple syrup

1 teaspoon vanilla extract

 

Preheat the oven to 180 degrees C.  Mix together spelt flour, baking powder, bicarb, salt and chia seeds in one bowl.  Cream together the melted coconut oil and sugar.  Add the lemon juice, lemon, maple syrup and vanilla extract.  Mix.  Add the wet ingredients to the dry ingredients and mix until it forms a sticky dough.  I used a biscuit maker but you can roll into balls and press down.  Bake for approximately 8-10 minutes.
