Easter Cake
My children do not like fruit cake, so I thought the perfect Easter Cake would be apple and cinnamon with oodles of marzipan. This is NOT a the healthiest recipe, I will warn you, however it is for Easter 😜. This recipe makes two layers, I made double the mixture and made four layers
250g Sharpham Park spelt Flour
2 teaspoons baking powder
1 ½ teaspoons bicarb
½ teaspoon salt
2 teaspoons cinnamon
½ cup coconut palm sugar
2 Tablespoons coconut oil, melted
1 teaspoon vanilla extract
¾ teaspoon apple cider vinegar
¼ cup maple syrup
1 cup coconut milk
2 apples, peeled, cored and diced
Marzipan

Preheat the oven to 180 degrees C. Mix together the spelt flour, baking powder, bicarb, salt, cinnamon, salt and coconut sugar in a large bowl. In a separate bowl mix together the coconut oil, vanilla extract, apple cider vinegar, maple syrup and coconut milk. Add the wet mixture to the dry mixture and mix with a whisk. Stir in the diced apples. Divide the mixture between 2 cake tins and bake for 15 minutes. I used marzipan rolled out between the layers and for the decoration on top.
