Chia Seed Pudding

This is such a lovely, comforting breakfast and super healthy. It keeps in the fridge for a good three days, so you just spoon it out and enjoy with fruit of your choice, mix in a yoghurt or top with Crunchy Raw Granola.  It’s amazing how these little seeds fatten up. Also super yummy made with coconut milk (again Rude Health is my go to coconut milk)

 

6 Tablespoons chia seeds

1 cup of Rude Health coconut milk (or plant based milk of choice)

1 teaspoon vanilla extract.  

 

Mix the chia seeds with the coconut milk and add vanilla extract.  Mix it up with a fork.  Leave it on the side and mix it up again after about 10 minutes.  As the chia seeds start to expand they can become a little clumpy so mix them every so often for the next 30 minutes.  Once they’ve been mixed a few times, pop them in the fridge until you want to eat them.
