Carob is a cocoa powder alternative.  It’s made from dried roasted carob tree pods and looks like cocoa powder.  It’s contains virtually no fat, contains calcium, is high in fibre, is gluten free, caffeine free and a great antioxidant.

200g Coconut Oil

120g Cashew Butter

80g Carob Powder

6 Tablespoons Maple Syrup

2 Teaspoons vanilla extract

Pinch Himalayan Salt

80g Rice Crispies

Melt the coconut oil, add the remaining ingredients and spoon into a square baking tray lined with parchment. Place in the freezer for about 20 minutes.  Remove and slice into squares.  Keep in a container in the fridge.
