Broccoli Soup

This is my son Max’s favourite  soup. We first had broccoli soup on a visit to Dubai one year, so I had to try to recreate it.  This version is super easy to make and is delicious.

1 Tin Coconut Milk

2 Heads broccoli, washed and chopped

1 Tablespoon Marigold Swiss Organic Vegetable Bouillon Powder

4 cloves garlic

Boiling water

 

Place the coconut milk, broccoli, garlic and vegetable bouillon in a large saucepan.  Add enough boiling water to cover the broccoli.  Bring to the boil, then simmer until the broccoli is just tender.  Take off the heat and allow to cool a little. Whizz up and enjoy.  Freezes perfectly too.

 

 

Boil until broccoli is just tender, whizz and enjoy!
