Banana, PB & Chia Brekkie Pot

Just before I went to bed last night I added 2 tablespoons of chia seeds to some Rude Health coconut milk, gave it a stir and popped it in the fridge for this mornings breakfast.  I then decided on what to add to it in the morning.  I sliced a banana and used half of it on top of the chia pud, then added some Alpro soya yoghurt, put the rest of the bananas on top of that.  Then made a mixture of peanut butter and maple syrup thinning it out with a little soy milk, poured it over and sprinkled some delicious pumpkin seeds on top.  I ate the lot!
