Apple Pie
The perfect dessert or even with afternoon tea. Lovely comforting apple pie. Delicious, vegan and refined sugar free. My family love it. This is a quick and easy recipe to make. You can serve it with dairy free ice cream, however it’s just as good on its own. You can substitute the spelt flour for gluten free flour too.
First, preheat oven to 180 degrees C. Grease a fluted tart tine (loose based is best) with coconut oil, making sure you grease up the sides too.
Apple filling
6 organic apples peeled, cored and sliced (I used red gala apples we had at home)
1 teaspoon ground cinnamon
2 Tablespoons coconut sugar
½ lemon juiced
Mix all of the above ingredients together in a bowl. Set aside while you make the crust.
Crust
1 cup Spelt flour – I use Sharpham Park
¾ cup Ground almonds
60g melted coconut oil
2 Tablespoons Maple Syrup
1 Teaspoon vanilla extract
Pinch of salt
Combine all the ingredients by hand until a dough is formed. You may have to add a little water to make into a dough. Press into the bottom and sides of the tart tin. Tip the apple filling into the tart base and with the back of a spoon, press the mixture down a little. Bake in the oven for approximately 15 minutes.
Take out of the oven and place on a cooling rack (still in the tin) to cool. Remove from the tin and serve with either dairy free ice cream, dairy free cream or all by its beautiful self.
