Apple Crumble
A favourite with the family. I am however under strict instructions to never, ever, under any circumstances put raisins in the apple crumble. That’s me told then!! If you use gluten free oats, this will then be wheat and gluten free alongside also being refined sugar free. Served with a healthy dollop of vegan custard, perfect for a Sunday lunch dessert. This recipe makes a large apple crumble as you ALWAYS want leftovers! I did use a lot of apples here, however as they were organic, they weren’t very big.
Apple filling
14 organic apples peeled, cored and diced
2 teaspoons ground cinnamon
3 Tablespoons coconut sugar
1 lemon juiced
Mix all of the above ingredients together in a bowl and place in a large rectangular baking dish
Crumble
2 cups oats whizzed in the blender
1 ½ cups ground almonds
½ cup rice flour
2 teaspoons cinnamon
5 Tablespoons coconut sugar
Water
Preheat your oven to 180 C
Mix everything together except the water. Add a little water at a time until the mixture starts to come together and form a dough. You don’t want it runny, a thick dough consistency is what you are after. Spoon on top of the apples, spreading the mixture covering all the apples. Bake in the oven for approximately 20-25 minutes, until the crumble is golden.
