Red Lentil & Carrot Soup

There’s nothing like a heart warming soup to cheer you up on a dreary winters day now is there?  I love lentils and this particular soup was such a hit with my 9 year old son, he loves dipping home made bread into it.  It’s full of nutrients too!.

 

 

5-6 Carrots chopped

1 red onion chopped

1 Tablespoon Marigold Vegetable Bouillon

1 cup red lentils (split peas) rinsed

Boiling water

 

Saute the onion in a little extra virgin olive oil until soft.  Add the remaining ingredients adding enough boiling water to cover the carrots.  Bring to the boil, reduce to a simmer until the carrots are cooked through.  Whizz up and serve with crusty bread or a bagel.
