Quinoa and Pea Salad
1 Cup Quinoa washed through a sieve
1 Tablespoon Vegetable Stock Powder
Place washed quinoa in a pan with the vegetable stock powder and cover with boiling water until just covered. Bring to the boil, then reduce to a simmer until the quinoa is cooked (the seeds sprout when cooked). You may need to add more water whilst cooking. Add the frozen peas when quinoa is cooked and stir through until thawed.
You can add nutritional yeast at the end if you want it to taste more cheesy or if it is too bland. I use Marigold Bouillon as it is quite salty which adds to the flavour.
