Lentil and Stuffing Balls

These are a quick and easy dinner option.  Delicious served on a bed of rice, peas and sweet corn with a yummy tomato and basil sauce. Vegan, dairy free, egg free and gluten-free

 

 

1 Packet ready cooked puy lentils – I use Merchant Gourmet or you can cook up your own around 250 g needed

 

1 Packet sage and onion stuffing mix – I use Mrs Crimbles Gluten Free

 

Make up the sage and onion stuffing mix. Let it cool and little before adding the lentils.  Mix together and add a little water if necessary.  Make up individual balls and fry in a little oil until crispy.  Either eat immediately or place on a lined baking tray and heat up when needed.  Freeze very well
