Carrot and Coriander Soup

Beautiful orange in colour.  You can omit the coriander if you find it offensive.  This simple soup recipe is perfect for freezing too. Only 4 ingredients away from a delicious meal.

 

1 Red onion chopped

6 large organic carrots, peeled and chopped

1 tablespoon Marigold Organic Swiss Vegetable Bouillon powder

Chopped coriander

 

Saute the red onion in a little extra virgin olive oil.  Add the carrots, veg bouillon and cover with boiling water.  Bring to the boil, simmer until the carrots are cooked.  Whizz up in a high speed blender.  Add the chopped coriander.
