A great side dish. I could eat this as a main though as I love the cheezy sauce. Dairy free, vegan and a hit with the kids too.
½ Head broccoli cut into florets
½ head cauliflower cut into florets
2 cups cashew nuts soaked
2/3 cup Nutritional yeast flakes
1 and ½ cups water
2 large cloves garlic, crushed
1 teaspoon salt
Dairy free grated cheese
Preheat oven to 180 C. Steam the broccoli and cauliflower until slightly tender. Place all the remaining ingredients, except the grated cheese, in a blender and blend until smooth. Spoon cooked broccoli and cauliflower into a baking dish. Pour over the cheese sauce, sprinkle with dairy free cheese and bake for approximately 10 minutes until the sauce is bubbling and the cheese has melted.
