Asparagus Soup

This is a delicious little number.  Simple, yet a showstopper.  Anyone who loves asparagus will hoover this one up.

 

Two bunches of asparagus, washed and chopped up

1 red onion, chopped

1 teaspoon extra virgin olive oil

1 tablespoon vegetable stock powder

Saute onion in the olive oil until soft. Add the asparagus, vegetable stock powder and add enough boiling water to cover the asparagus.  Reduce to a simmer until the asparagus is cooked.  Whizz up and serve with lots of lovely warm crusty bread.
