Apple Loaf
Chia Seed Pudding

A delicious apple loaf with a decent helping of cinnamon makes this such a wonderful Christmas bake.  Easy, refined sugar free and vegan, this loaf also has the ability to make the entire house smell divine!

 

 

4-6 apples, depending on size, peeled, cored and cubed

250g Sharpham Park Spelt flour

¾ teaspoon apple cider vinegar

½ cup coconut palm sugar

¼ cup maple syrup

1 teaspoon baking powder

1 teaspoon bicarbonate of soda

2 teaspoons cinnamon

Pinch salt

2 Tablespoons coconut oil melted

1 Cup coconut milk

1 teaspoon vanilla extract

 

Preheat oven to 180 degrees Celsius.  Grease a standard size loaf tin with some coconut oil.  Mix together the spelt flour, baking powder, coconut sugar, cinnamon, salt and bicarb.  In a jug or another bowl mix together the maple syrup, milk, melted coconut oil, apple cider vinegar, vanilla extract.  Pour into the flour bowl and mix together.  Stir in ¾ of the  apples and pour into the tin.  Top the loaf with the remaining apples. Bake for approximately 20-30 minutes
