Almond Granola
Chia Seed Pudding

Granola is always such a comfort for me.  I love it, so do the children, however, most shop bought granola is full of refined sugar.  This version is delicious, refined sugar free and so easy to make.

 

2 ½  cups Gluten Free Oats

¼ cup Almond Butter

1/3 cup maple syrup

¼ cup coconut oil

1 cup blanched almonds

1 cup dessicated coconut

 

Method

 

Mix together oats, almonds and coconut.  In a saucepan heat up almond butter, maple syrup and coconut oil.  Pour liquid over the oats mixture, spread out evenly over two baking trays.  Bake at 180 degrees for about 20 minutes, turning every now and then to stop from burning.  Allow to cool and place in a seal tight jar.
